The Jedi Outcast game did a pretty good job. Instead of just slashing motions occurring, there was contact between the blades in which you would deal no damage, so it wasn't just an effect. Also, there were strength battles that weren't random.

All the republic classes for the exception of the Consular ( for me at least) look so fun to play. The trooper just intrigues me so much.
