Lardo is an Italian type of charcuterie that consists of pork fatback that gets cured for three months to a year in a marble cellar, while packed with salt and herbs. The result is a creamy, butter like meat that adds a level of complex savoriness to anything it's paired with. Often served chilled, lard can be frequently found on crostini, in salads, on pizza, or served as part of a salumi plate.
